Veg Dumplings: Soft, juicy, and packed with flavor
Ingredients *****
The Fresh Base (Filling) | The Dry Soul & Dough |
Cabbage & Carrot: 2 cups (finely grated) | All-Purpose Flour (Maida): 2 cups (for dough) |
Spring Onion: 1/2 cup (finely chopped) | Black Pepper Powder: 1/2 teaspoon |
Ginger & Garlic: 1 tablespoon (finely minced) | Soy Sauce: 1 tablespoon |
Oil: 1 tablespoon | Salt: To taste |
Water: As needed (for a firm dough) | Cornstarch: 1 teaspoon (to bind filling) |
Step 1: The Pop (Preparing the Filling)
This step creates a flavorful, non-watery core for your dumplings.
- Squeeze the grated cabbage and carrots tightly with your hands to remove all excess water (this prevents soggy dumplings).
- Heat 1 tablespoon of oil in a pan; add the minced ginger, garlic, and spring onions.
- What to look for: Once the garlic smells fragrant (don’t brown it), add the squeezed veggies and sauté on high heat for just 2 minutes.
Step 2: The Base (The Wrap)
This step is about creating the perfect vessel for your filling.
- Mix flour, a pinch of salt, and water to knead a smooth, firm dough. Let it rest for 20 minutes.
- Roll the dough into a long log and cut into small, equal pieces. Roll each piece into a thin 3-inch circle.
- Important Tip: Make sure the edges are thinner than the center; this ensures the dumpling cooks evenly at the pleats.
- What to look for: Place a spoonful of filling in the center, dampen the edges with water, and fold into pleats or a half-moon shape.
Step 3: The Dust (Seasoning & Steam)
This step locks in the juices and finishes the dish.
- Before folding, ensure you’ve mixed the Soy Sauce, Black Pepper, Salt, and Cornstarch into your sautéed filling.
- Arrange the dumplings in a steamer basket lined with parchment paper or greased cabbage leaves.
- Steam over boiling water for 8 to 10 minutes on medium-high heat.
- What to look for: The dumpling skin should look translucent and feel non-sticky to the touch. Serve hot with a spicy chili-garlic dip!
