Gulab Jamun: Soft, melt-in-the-mouth laced with rose syrup

The Fresh Base (The Dough)

The Dry Soul (The Syrup)

Khoya (Mawa): 200g (fresh and crumbled)

Sugar: 1.5 cups

Paneer: 50g (fresh and grated fine)

Water: 1.5 cups

All-Purpose Flour (Maida): 3-4 tablespoons

Cardamom (Elaichi): 3-4 pods (crushed)

Ghee: For deep frying

Rose Water: 1 teaspoon

Milk: 1-2 tablespoons (if dough is dry)

Saffron (Kesar): A pinch

Gulab Jamun

Step 1: The Pop (The Sweet Saffron Syrup)

This step creates the “Chashni” that will soak into the dumplings.

  1. Mix Sugar and Water in a deep pot. Bring to a boil on medium heat.
  2. Add the crushed cardamom and saffron strands.
  3. What to look for: Simmer for 5–7 minutes until the syrup is slightly sticky (half-string consistency). Stir in the rose water and turn the heat to the lowest setting to keep it warm.

Step 2: The Base (The Smooth Dough)

This step ensures your Gulab Jamuns are soft and crack-free.

  1. Mash the Khoya and Paneer together using the palm of your hand until the mixture is absolutely smooth and grainy textures are gone.
  2. Mix in the Maida and a pinch of cardamom powder. Knead into a soft, supple dough.
  3. Important Tip: If the dough feels tough, add a few drops of milk. Divide into small portions and roll into smooth, round balls.
  4. What to look for: The balls must have zero cracks on the surface. Cracks will cause them to break while frying.

Step 3: The Dust (The Golden Fry & Soak)

This step gives the dessert its iconic dark golden color and juicy core.

  1. Heat Ghee in a kadhai on low heat. (Ghee gives the best flavor, but oil works too).
  2. Gently slide the balls in. Do not touch them immediately; instead, swirl the oil around them with a spoon.
  3. What to look for: Fry on low heat for 8–10 minutes, rotating constantly until they are an even dark golden-brown.
  4. Remove with a slotted spoon and drop them immediately into the warm syrup. Let them soak for at least 2 hours so they double in size.
