Kesari Rice Kheer: Slow-cooked rice pudding with cardamom and saffron

Step 1: The Pop (The Grain Toast)
Toasting the rice in ghee adds a layer of richness and prevents the grains from sticking.
Drain the soaked rice and pat it dry. You can slightly crush the grains with your hands for a creamier texture.
Heat 1 teaspoon of ghee in a deep, heavy-bottomed pot.
Add the rice and sauté on low heat for 1 minute.
What to look for: The rice should look opaque and smell slightly toasted. This ensures the rice doesn’t turn into a “paste” but stays as soft, distinct pearls.
Step 2: The Base (The Slow Simmer)
This step is where the milk thickens and the rice releases its natural starch.
Pour 1 litre of full-fat milk into the pot with the rice.
Bring to a boil, then turn the heat to low.
Cook uncovered for 25–30 minutes, stirring every few minutes. Use your spoon to scrape the “malai” (cream) from the sides of the pot and stir it back into the milk.
Important Tip: Constant stirring prevents the milk from burning at the bottom. The kheer is ready for the next step when the milk has reduced by nearly half and the rice is completely soft.
Step 3: The Dust (The Aromatic Finish)
This step adds the sweetness and the royal spice profile.
Add the Sugar once the rice is fully cooked (adding sugar too early prevents rice from softening).
Stir in the crushed Cardamom, the Saffron-infused milk, and the raisins/nuts.
Simmer for another 5 minutes until the kheer reaches a thick, pouring consistency.
Final Touch: Turn off the heat and add the rose water. Kheer thickens as it cools, so leave it slightly thinner than your desired final result. Serve warm or chilled.
