Mac & Cheese: Creamy, golden comfort with a hint of warmth

Step 1: The Pop (The Roux)
This step creates the thick, velvety base that prevents the cheese from clumping.
Boil the macaroni in salted water until “al dente” (firm to the bite). Drain and set aside.
Heat 2 tablespoons of butter in a heavy-bottomed pan on medium-low heat.
Add the minced garlic and sauté for 30 seconds until fragrant.
Whisk in 2 tablespoons of flour.
What to look for: Cook the flour-butter mixture (the roux) for 1 minute until it smells slightly nutty and looks pale gold. Do not let it turn brown.
Step 2: The Base (The Liquid Gold)
This step transforms milk and cheese into a smooth, flowing sauce.
Slowly Pour the milk into the pan while whisking constantly to ensure there are no lumps.
Simmer on medium heat for 3–5 minutes until the sauce thickens enough to coat the back of a spoon.
Turn off the heat (crucial!) and fold in the grated cheese.
Important Tip: Residual heat is enough to melt cheese. If the sauce is boiling when you add cheese, it will become grainy and oily.
Step 3: The Dust (The Flavor Finish)
This step adds the “kick” that cuts through the heavy creaminess.
Add the Mustard powder, Black Pepper, Paprika, Oregano, and a pinch of Nutmeg.
Season with Salt (be careful, as cheese is already salty).
Toss the cooked macaroni into the cheese sauce and stir gently until every tube is filled with liquid gold.
Final Touch: If the sauce feels too thick, add 1–2 tablespoons of the water you used to boil the pasta. Serve immediately while bubbling.
